Lawson, the Japanese convenience store chain, will launch three new products - a dessert, a bakery item, and a salad - on September 29, all developed from concepts generated by AI. The rollout across roughly 4,700 stores in the Kanto-Koshinetsu region marks the company's first full-scale commercial use of Generative AI and LLM in product development. The initiative deliberately excluded past sales data during ideation, forcing unconventional combinations that challenge standard R&D processes.
Three products built around "what the heck?"
The lineup targets immediate customer curiosity. The Lemon Tart (Pickle Flavor) sells for ¥270 including tax. The Sake-Leavened Red Bean Butter Yogurt Bread costs ¥181. The Mix-to-Eat Japanese-Style Parfait Salad, which includes rice noodles, is priced at ¥475. In-store displays will carry labels like "AI-devised" and "AI came up with this!?" to signal the products' origin.
The development team gave the AI a specific thematic brief: "unprecedented combinations and flavors," product names that make people think "what the heck?" the moment they see them, and tastes that prove "delicious once you actually try them." Product developers then refined the AI's raw proposals through repeated prototyping and testing, adjusting flavor balances and visual presentation before finalizing each item.
Deliberate distance from market data
Lawson's approach set aside historical sales figures and market trends during the concept phase. The goal was to surface combinations that existing thinking would filter out. The Lemon Tart (Pickle Flavor) came from an AI proposal pairing lemon tart with pickles - developers balanced the acidity of chopped pickles with lemon freshness and cheese richness while preserving the tart's visual identity. The Sake-Leavened Red Bean Butter Yogurt Bread originated from a "red bean butter combining fermented ingredients" concept, layering sake-leavened dough with chunky red bean paste, fermented butter margarine, and yogurt cream. The parfait salad combines seven ingredients, including red daikon radish, cucumber, okra, and imitation crab, with rice noodles in a white dashi jelly dressing.

The lemon tart and red bean butter bread will reach approximately 4,700 stores across Tokyo, Kanagawa, Saitama, Chiba, Ibaraki, Tochigi, Gunma, Niigata, Yamanashi, and Nagano prefectures, though the tart excludes Natural Lawson locations. The salad will sell in roughly 3,800 stores across Tokyo and six surrounding prefectures, excluding Niigata, Yamanashi, Nagano, and some Saitama stores. Lawson plans to expand its AI-driven product development based on sales data and customer feedback from this launch - incorporating the market information it deliberately withheld this time.
