Digitory CEO outlines vision for app-less, AI-powered hospitality operations

Hospitality operators often discover food cost overruns and missed orders only when it's too late to fix them. Shivprakash S. Mogali, Founder and CEO of Digitory, spent time on restaurant floors watching orders disappear, systems crash during peak hours, and purchase managers wrestle with disconnected spreadsheets. That experience led him to build Digitory, an AI-powered restaurant operating system that links POS, kitchen and procurement into a single real-time view. The company has since extended the same logic to large-scale events through Obvvy, a platform that removes wristbands, hardware and long queues by letting guests order and pay from their own phones.

Why most restaurant systems still operate in silos

"The front of the restaurant and the back of the restaurant didn't talk to each other," Mogali said. Most venues run POS, inventory and procurement as three separate tools. When an item sells, inventory updates hours or days later, often via manual spreadsheet entry. "A place could be doing great business and still losing money in the kitchen, and nobody would know until the numbers came in at month end," he added. Digitory connects these layers so that every sale immediately reflects in stock levels and cost calculations, giving managers a live feed of profitability rather than a rear-view mirror.

Obvvy takes the hardware out of event payments

Cashless event solutions typically rely on RFID or NFC wristbands. While tapping a wristband speeds up payment, it does nothing to shorten the line of people waiting to place an order. "The queue was never really a payment problem. It's an ordering problem, too many people trying to reach one counter at the same time," Mogali said. Obvvy bypasses wristbands and top-up stations entirely. Guests scan a QR code upon entry, receive a WhatsApp link, and place orders directly from the browser-based app. When an order is ready, a unique QR code appears on the guest's phone; counter staff scan it to confirm and hand over the item, eliminating double punches and confusion.

The shift mirrors a broader push toward AI for Hospitality & Events, where venues replace disconnected tools with integrated, real-time systems. Obvvy works with Digitory's backend or independently with other POS platforms, so clubs and event spaces can adopt it without overhauling existing infrastructure.

Real-time analytics and predictive AI close the reaction gap

Digitory's platform includes predictive analytics that forecast sales, costing, and anomalies for the next week or next month, giving operators a chance to act before money leaks. "Data only helps if it's current and futuristic," Mogali said. "A restaurant owner looking at last month's report can't fix today's problem, that loss already happened. Real-time data changes that and with AI we can predict the sales, costing and anomalies for not just today but for the next week, next month. This gives the real edge!" The same live data feeds into inventory and procurement, so purchase managers adjust orders based on actual consumption patterns rather than guesswork.

Why this matters for Hospitality & Events Professionals

Operators who rely on end-of-month reports to manage food cost are flying blind. Digitory and Obvvy demonstrate that connecting ordering, payment and backend systems in real time eliminates the typical lag between a transaction and its impact on margins. For event managers, the WhatsApp-first, hardware-free model removes the logistical burden of wristband distribution and reconciliation, while cutting queue times at bars and counters. As guest expectations shift toward frictionless, app-less interactions, venues that adopt integrated, AI-driven operations will have fewer hidden losses and faster service-advantages that compound with each new event or service.
