- 2) Classify data: define what can/can't leave your environment. Block PII/PCI in prompts. Minimize by default.
- 3) Vendor due diligence: demand data-retention terms, SOC 2/ISO, PCI scope, encryption, audit logs, model training policies, and region controls.
- 4) Access and keys: enforce SSO and least privilege. Store API keys in a vault. Rotate often. Kill personal accounts.

- Use an AI gateway/proxy to centralize filtering, logging, and keys.
- Tokenize or redact PII before it reaches any external model.
- Separate AI workloads from PMS/POS networks; restrict east-west access.
- Apply retrieval access checks at query time, not just at index time.
- Use synthetic data for testing instead of production exports.

You don't need a legal thesis to get started. Map data, minimize exposure, log activity, and prove control.
