AI agent for food scientists
Sugar Reduction Reformulation Agent
A reduced sugar formula that meets sweetness, texture, cost and claim targets after a few trials.
What it does
Cutting sugar by 30 percent also cuts bulk, browning, sweetness and shelf life, and each bench trial teaches something new. This agent proposes ingredient swaps to reduce sugar, such as fibers, polyols, high-intensity sweeteners or flavor modifiers. It computes the nutrition panel and checks label claim limits, such as the threshold for a reduced sugar claim. After each bench trial, the developer enters sweetness, texture and notes, and the agent revises the formula and tracks the results against targets for sweetness, texture and cost. It continues until the targets are met or the plan is stopped. You approve trials and the final formula. Edge case: a swap that makes the product exceed a limit for a laxative-effect warning is rejected early.
How it works
Follow the arrows from top to bottom. The orange dashed arrow is the loop: when a check fails, the agent goes back and tries again.
Read the steps as a list
- Reformulation brief set
- Read the current formula, targets and claim rules
- Propose sugar swaps and amounts that restore bulk and sweetness
- Calculate the nutrition panel and cost for each option
- Does each option meet the claim limits and cost ceiling? If not: drop or adjust the option and recalculate. Back to step 3.
- Developer approves the trial formulasThe agent waits here for your OK.
- Read bench trial results for sweetness, texture and notes
- Are sweetness, texture and cost within the targets? If not: revise the formula for the largest gap and propose the next trial. Back to step 3.
- Record the trial history and the reasoning
- Developer approves the final formulaThe agent waits here for your OK.
- Final formula and trial record
How it decides
Swaps are ranked by how well they restore bulk, sweetness and function at an acceptable cost. After a trial, the largest gap against the targets sets the next change.
- Sugar reduction under the claim threshold: adjust until the claim is met
- Sweetness below target by over 1 point on a 9-point scale: raise sweetener or flavor
- Polyol dose above the warning level: reject the option
- Cost above the ceiling by over 5 percent: look for a cheaper bulking agent
Make it yours
Every agent is a starting point. You choose these settings for your own situation.
- Sugar reduction target
- Sweetness and texture targets
- Ingredient list allowed
- Cost ceiling
- Maximum trials (default 5)
What keeps you in control
It always asks you first
- Each trial
- The final formula
Hard limits
- Never run a trial or change a recipe on the line
- Never make a claim the label rules do not allow
It stops when
- Done: targets met and formula approved
- Stop: five trials without meeting targets, developer decides
